El maridaje by Centelles"},"content":{"rendered":"<p><strong>Si quieres saber algo m\u00e1s sobre maridaje entre platos y vinos, este libro est\u00e1 llamado a convertirse en uno de los grandes, quiz\u00e1s no tanto por su valor acad\u00e9mico, sino por el esfuerzo divulgativo que hace para explicar la relaci\u00f3n entre comida y vino.<\/strong><\/p>\n<p><strong>Ferran Centelles<\/strong> es un gran sumiller y adem\u00e1s escribe muy bien. Domina un estilo narrativo que conjuga personalidad y sencillez, algo muy dif\u00edcil de lograr aunque al lector le parezca casual. El libro est\u00e1 pensado de antemano (de hecho iba a ser un documental), y apoyado en una profusa bibliograf\u00eda que supone una continua incitaci\u00f3n a leer m\u00e1s sobre el tema. Es evidente que Centelles ha escrito un tratado serio, basado en a\u00f1os de estudio, lectura e investigaci\u00f3n.<\/p>\n<p>Pero lejos de alardes y mitos sobre el maridaje, Ferr\u00e1n reconoce que el \u00e9xito de elegir el vino que acompa\u00f1a a una comida depende en gran parte de las expectativas del comensal, de su predisposici\u00f3n, de su estado an\u00edmico y del poder del entorno, en el que incluye la labor del sumiller, ese contador de cuentos, ese transmisor de la pasi\u00f3n por el vino. La paradoja del libro es que desmitifica bastante la importancia del maridaje, y sin embargo es una incitaci\u00f3n constante a la experimentaci\u00f3n entre comida y vino.<\/p>\n<p>El sumiller hace un esfuerzo pedag\u00f3gico para intentar explicar las t\u00e9cnicas que utilizan en su gremio para tan ardua tarea, pero en su discurso siempre subyace el mismo mensaje: cada uno tiene que experimentar y hallar sus preferencias en este terreno, con la advertencia de que el camino es muy placentero. Los profesionales pueden ayudar, evidentemente, pero la inquietud personal de degustar platos y vinos es fundamental.<\/p>\n<p>Todo este discurso desmitificador sobre el maridaje no impide que Centelles exhiba sus a\u00f1os de estudios, de sus conversaciones con reputados chefs y sumilleres, y de sus experiencias y aprendizajes con sus c\u00edrculo m\u00e1s \u00edntimo. As\u00ed, lo mismo pontifica sobre el conocimiento cient\u00edfico que aporta la investigaci\u00f3n molecular aplicada a los alimentos y el vino, como los laboratorios en las grandes cocinas o en las casas de de los amigos.<\/p>\n<p>El libro tiene muchas notas autobiogr\u00e1ficas de la trayectoria de un joven Ferran que muy pronto entra a trabajar en el m\u00edtico <strong>elBulli<\/strong> y que dedica sus ahorros a recorrer buena parte del mundo para ir a buenos restaurantes y probar maridajes distintos, aunque a la noche tenga que dormir en un peque\u00f1o autom\u00f3vil. Hay referencias a restaurantes, chefs y sumilleres m\u00edticos, as\u00ed que prepara tu l\u00e1piz para subrayar, y hacer la lista para enviar a los reyes magos sobre los sitios que te gustar\u00eda visitar.<strong> Il Vino<\/strong>, un restaurante parisino con nombre italiano, est\u00e1 en las primeras posiciones de mi lista.
